The Butter Chicken That Will Impress Everyone

Ingredients

For the Chicken Marinade:

- 3 kg chicken (cut into cubes)

4 Tbsp yogurt

2 cubes crushed garlic

2 cubes crushed ginger

- 3 tsp salt

- 2 tsp paprika

1 tsp Kashmiri chili powder

- 1½ tsp garam masala

1 tsp cumin powder

- 1 stick of butter

For the Sauce:

125 grams butter

3 large onions, finely chopped

- 1 cube crushed garlic

1 cube crushed ginger

1½ cans diced tomatoes

- 1/2 mug cashews

1-2 tsp salt

- 2 tsp garam masala

1-2 tsp Kashmiri chili powder

1 squeeze lemon juice

400 ml double heavy cream

To Garnish:

Fresh cilantro, chopped

Double cream (optional)

METHOD

1. Marinate the Chicken:

- In a large bowl, mix the yogurt, garlic, ginger, salt, paprika, Kashmiri chili powder, garam masala, and cumin powder.

Add the chicken cubes, coating them well. Marinate for at least 1 hour in the refrigerator.

2. Cook the Chicken:

- Heat a stick of butter in a large pan over medium heat.

- Add the marinated chicken and cook until fully done and slightly browned.

Remove from the pan and set aside.

3. Make the Sauce:

- In the same pan, add 125g butter and melt it.

- Add the chopped onions and sauté until soft.

Stir in the crushed garlic and ginger, cooking for 1-2 minutes until fragrant.

- Add the diced tomatoes and cashews, letting it cook for 5-7 minutes until the tomatoes soften.

Add garam masala, salt, Kashmiri chili powder, and cook for another 2-3 minutes.

4. Blend the Sauce:

- Let the sauce cool slightly, then blend until smooth and creamy.

Return the blended sauce to the pan and add a blob of butter. Stir in the 400 ml of double cream. Taste and adjust

5. Finish the Dish:

Add the cooked chicken to the sauce and simmer gently, stirring to coat the chicken evenly.

6. Garnish and Serve:

Garnish with chopped cilantro and a drizzle of double cream if desired.

I've tried countless butter chicken recipes over the years- some incredibly simple, others more complex but none of them hit the make quite like this one.
